Anyone have a delicious yet easy recipe for potatoe skins?

I have Yukon Gold potatoes, cheddar and white cheddar shredded cheese, er and sour ceam. I decided to try to make potato skins. Obviously this is my firs attempt so anyone who can contribute true and tried methods I'll be very thankful. Thanks in regards.
